I don?t want to sound too much like a soda jerk, but there?s something truly refreshing about making your own fizzy water. And if you?re going to make carbonated water at all, why not live deep, suck the marrow out of life, and clone your favorite top-shelf mineral water?

Here?s what you should know.

First off, since you?re going to be drinking a lot of homemade Gerolsteiner, you should probably pick up a keg to fill. If you?re not sure of how much you can handle, you can use an off-the-shelf gadget like iSi or SodaStream for starters, but they?ll only give you a liter at a time. Sooner or later, you?ll want to upgrade. (I?ll be honest. I only started this quest to find fountains and fountains of sparkling water because I happened to have three empty kegs that I needed to put something in.)

Two of my kegs came from my dad?s high school buddy, who, after years of serious home brewing and heavy drinking, discovered the miraculous power of AA, probably with a little prodding from the local brass. Dad?s a pharmacist and along with the kegs, he?s given me a certain reverence for early American druggists, who, lest we forget, dispensed phosphates and bicarbs along with carbonated, caffeinated colas. The other keg came from the local transfer station. There was some fuzzy syrup from somebody?s wedding in the bottom of that one, which brings me to the first step: Sanitize your container. (Note: Bleach corrodes a keg, so you might actually want to buy some off-the-shelf sanitizer).

If you?re working with kegs, go to the welding supply store and pick up a tank of CO2. ?Kegerator?? The guy working will probably ask, especially if you happen to be a young dude and you are not wearing Dickies. Tell him no, you?re just really into drinking water.

While you?re there, pick up the requisite gas regulator and hoses, or head over to a home-brewing supply store for these. Presumably, though, you have the rest of what you need at home ? an unlimited supply of delicious tap water. (Note: In Phoenix and some of the drier places in the country, carbonating and adding minerals to the water may not be enough to actually make the odd flavors of the water appealing, although New Yorkers love sparkling Chateau Bloomberg, drawn fresh from the Pepacton.)

Which brings us to the next step: Figure out what minerals you want in your water. It really helps if you have a favorite brand of mineral water to copy. Martin Lersch of the blog Khymos created a series of Excel spreadsheets that shows the contents of some classic European specimens. Yes, you can to steal the recipe for Perrier. It has 390 milligrams of sodium bicarbonate per liter.

Next, find out what?s in your tap water. If you drink municipal water, chances are the public utility has done your dirty work and you can find a recent chemical analysis from the water department. Tap water tends to have a little bit of chloride, some sodium, and a minuscule amount of calcium. For my kegs, I did the math and subtracted these salts from the recipe for Gerolsteiner, the classic German bubbly, and added in the other minerals. My recipe amounted to a dash of table salt, two dashes of Epsom salt (found in health food stores), a heaping teaspoon of pickling lime (found at farm supply stores and as ?Cal? at the Mexican grocery), and less than a half teaspoon of baking soda and milk of magnesia (found in the laxative section of drugstores).

For those of you with triple beams at home, that?s 0.5g NaCl, 1g MgSO4, 6.4g Ca(OH)2, 3.1g of NaHCO3, and 2.3 g Mg(OH)2.

I pray for you sinners who slept though math class in high school and any Americans out there who still have an aversion to the metric system, but until someone develops the app you?re going to have to sit down and do some calculations ? and those, frankly, are a lot easier to do in grams and liters. You?ll find that even with a 19-liter keg, the quantity of minerals you?re adding is almost immeasurably small. These quantities get even smaller with an 850-mL home carbonation system. The easiest way around this is to make a concentrated mineral water ?stock,? a kind of liquid bouillon. Dissolve 10 liters? worth of the mineral mixture with 100 mL of water and, for every liter of water you make, add 10 mL of the concentrated solution.

I should tell you that the water will look milky and taste like cement at this point, heavy and kind of dull, until you carbonate it, which will dissolve those minerals, clarify the water and lighten the flavor and texture. How fizzy you want it is up to you. At 30 pounds of pressure, it?s refreshing, but nothing like the throat-ripping satisfaction of real seltzer or ice-cold European mineral water. I like it molto frizzante, you know? I filled the keg with water, closed the lid, pumped in 60 psi, and rocked it back and forth on the kitchen floor to mix it. (Note: It?s also fun to pretend you?re a lumberjack here, using the keg instead of a log rolling down a river. Note too: This is only fun until the keg shoots out from under your feet.)

The final variable is how to store and serve the water. Since there?s an inverse relationship between the water temperature and the amount of soluble carbon dioxide, cold bubbly is the way to go. If you?ve ever had a warm Coke, you know there?s a lot of foam and not a lot of fizzy bite. So actually, a Kegerator isn?t a terrible idea. (Just don?t tell the welding shop guy you?re buying a Kegerator for water; you?ll break his heart.) If you don?t decide to go that far, you can always fill bottles with homemade sparkling water, seal them, and chill them in the refrigerator. And now you?re ready to discover the fine line between ahh and ahhhhhh!

19 JanChina cancer village tests reach of law against pollution (Reuters)

XIAOXIN, China (Reuters) ? Nothing in Wu Wenyong’s rural childhood hinted he would end up on a hospital bed aged 15, battling two kinds of cancer.

Born to poor farmers in Xiaoxin, a dusty village of low brick houses in southwestern Yunnan province, he paddled in the Nanpan River as a child and later helped his parents tend rice.

About 3 km (two miles) from Wu’s home stands a three-storey high hill of chromium slag produced from the Yunnan Luliang Peace Technology Company. The runoff from chromium-6, listed as a carcinogen by the World Health Organisation, seeped into the Nanpan, turning its waters yellow.

And the toxic water and earth that Wu’s family blames for his condition have become a battleground over how far China will bend to letting courts punish pollution.

The chromium hill is a rallying point for a coalition of environmental advocacy groups, who have filed a public interest lawsuit for residents of Xiaoxin and nearby Xinglong in a special environment court.

Last September, Wu’s face ballooned and tumor-like growths developed on his neck. He was diagnosed with thymoma, cancer of the thymus gland in the chest, and with leukemia.

“The pollution is quite terrible. I’ve heard stories of cattle dying,” Wu said, from his hospital bed in Kunming, the capital of Yunnan. “I’ve seen the water in the river and it’s all yellow. I’ve never drunk the water.”

Beset by growing public alarm and protests about pollution, China’s leaders have reached for a remedy they have otherwise shown little appetite for: letting the courts decide. Those courts come under the control of the ruling Communist Party, but environmental campaigners spot a welcome, if narrow opening.

In a country where non-governmental organizations have long been treated with suspicion by authorities, collective litigation by organizations with no government backing is breaking new ground in the environment courts. The groups want the privately owned company to establish a 10 million yuan ($1.6 million) compensation fund for an environmental clean-up.

“This is a significant case,” said Qin Tianbao, a professor of environmental law at Wuhan University, uninvolved in the case. “In the past, lawsuits were only launched by agencies with semi-official backing. If it is possible that an organization with absolutely no government backing can bring about a public interest litigation, then it certainly is a good thing.”

The Yunnan Luliang Peace Technology Co. was established in 2003, according to its website. It makes chromium, a metal used in stainless steel, paints, plastic and dyes, and sodium dichromate, used for the tanning of leather.

Both are highly carcinogenic metals.

The company declined Reuters’ request for an interview.

Polluting factories have been relocated from urban areas to the countryside, home to half of China’s population. Local officials rely on these industries to generate tax revenues.

“Why was the factory built here and not Beijing and Shanghai? Because in Beijing and Shanghai, there are people watching,” said Chang Shichen, 47, a villager from Xinglong.

The lawsuit had been due to go to trial in the city of Qujing last November, but was delayed until February to give advocates more time to assess the ecological damage, said Li Bo, director of Friends of Nature, one of the groups involved.

Environmental groups dispute local authorities’ assertion that the water is now safe.

“There is no problem with the village’s water now, although I’m not sure about the specific circumstances,” Ji Honghua, an official with the Qujing Municipal Environmental Protection Bureau, said by telephone.

In the two villages, which are surrounded by an industrial park, residents drink either bottled water or water supplied from a small river and later filtered.

The local government gave Wenyong’s father, Wu Shuliang, 1,000 yuan after he told officials about his son’s plight. He borrowed 50,000 yuan for his son’s chemotherapy — and family members say there is no health insurance to reclaim the money.

“All I want is for the government to give us an answer about the pollution,” said Wenyong, a tear rolling down his cheek.

His hair has fallen out from chemotherapy and he weighs 32 kg (70 pounds), almost 10 kg lighter than before his illness.

Wenyong’s doctor, a woman surnamed Li, said her patient in any case needs two to three years of follow-up treatment.

Last year, the environmentalist Li learned from a media report that 5,000 tonnes of chromium-6 had been dumped outside a district of Qujing. He investigated and found 140,000 tonnes had been buried in the nearby villages of Xiaoxin and Xinglong.

“Many villagers didn’t know what chromium is, they thought it was soil, so they’ll dig up the chromium to pave roads. “Others will use it to build the foundation of their homes,” he said. “They work barefooted in the fields. Some of their feet would start to rot and they would never understand why.”

HIGH EXPOSURE

The chromium-6 levels in the water were 200 times above the permissible limits, Ma Tianjie of Greenpeace in China said after

an independent investigation was conducted.

Enforcement of laws regulating the disposal of chromium is poor. Greenpeace’s Ma estimates there are 1 million tonnes of chromium-6 dumped across China that still has not been disposed of, based on environment ministry data.

Virtually every resident of the villages knew of someone who contracted cancer after the industrial park was set up about seven years ago. No epidemiological studies have been conducted.

Studies have shown that exposure to chromium-6 causes leukemia and cancer of the stomach, liver and breast.

“It is one of the worst chemicals to get in drinking water,”

Max Costa, chairman of the department of environmental medicine at New York University, said in emailed comments.

Wu’s family needs no convincing about what is to blame.

“Our plot of farmland was just next to the chromium slag,” said the elder Wu. “They even dug a drain next to our land for the runoff.”

In September, the local government arrested five people for the dumping and ordered the company to halt production of chromium and sodium dichromate.

The hill is now covered by metal slabs. Guards monitor the company around the clock to ensure production has stopped and detoxification will be completed in August, Ji from the Qujing environmental bureau said.

Li recruited lawyers, academics and other NGOs to look into the feasibility of filing a lawsuit and the team named the Qujing Environmental Protection bureau as a co-plaintiff,

Two weeks after their case was accepted by the Qujing court, the central government’s Civil Law Draft Amendment Office sought Li’s views on amendments to draft legislation.

An official told him the government was considering letting “social organizations” bring lawsuits about pollution and food safety.

Although “social organizations” have not been defined, new laws could lead to more “public interest” litigation and allow ordinary people to join forces to defend their interests.

Li said he was “cautiously optimistic” about prospects for victory in the Qujing case — which he said he had raised in his discussions with the government.

“If this has already happened, that an environmental organization with a status like ours could successfully file a public interest lawsuit, not including us in future interpretations of the amendments to the civil law, will be something that is unjustified,” he told the official.

But without an independent judiciary, the environment courts will continue to avoid handling sensitive cases, said Zhang Jingjing, a lawyer involved in many pollution causes.

“Our circle of lawyers has a saying: in China, the big cases are about politics, the mid-sized cases are about influence and only the small cases deal with law,” Zhang said.

15 JanGold nano ‘ears’ set to listen in on cells

MOVE over microphones, nanophones have arrived. A gold sphere just 60 nanometres in diameter is the most sensitive listening device ever created, paving the way for soundtracks to formerly silent movies of bacteria and other single-celled organisms.

Alexander Ohlinger at Ludwig Maximilian University in Munich (LMU), Germany, and colleagues suspended gold nanoparticles in a drop of water. They trapped one sphere in a laser beamMovie Camera and then fired rapid pulses of light from a second laser at others a few micrometres away. The pulses heated the nanoparticles, which disturbed the water around them, generating pressure, or sound, waves.

The single laser-trapped nanoparticle then began to jiggle back and forth, as if it were reacting to the sound waves. To make sure the jiggling was not due simply to the random motion of water molecules, the researchers varied the frequency of the sound waves. The trapped particle matched the frequency every time, and the direction of its movement lined up with the sound waves’ direction, providing further evidence that it was reacting to the waves (Physical Review Letters, DOI: 10.1103/physrevlett.108.018101).

The tiny microphone picked up sounds down to some minus 60 decibels – a level one-millionth of that detectable by the human ear. That makes it more sensitive than any other listening device, says team member Andrey Lutich, also at LMU. “We could not find any other sound detector capable of detecting acoustic waves with such a high sensitivity,” he says.

The technique could one day let us listen in on the tiniest living structures, including cells and viruses, according to the team. Changhuei Yang of the California Institute of Technology in Pasadena, who was not a member of the team, agrees. He says living cells have been seen vibrating under the microscope, but no one has yet set up a microphone to record their sounds. “It would be interesting to try to build upon the technology along this direction,” he says.

Doing that could also tell us more about the mechanical properties of cells and how they change as a result of disease.

In 2008, researchers led by YongKeun Park and Monica Diez-Silva of the Massachusetts Institute of Technology found that red blood cells vibrated less when they were infected with the malaria parasite, apparently because the infection made the cells stiffer than normal (Proceedings of the National Academy of Sciences, DOI: 10.1073/pnas.0806100105).

The gold-nanoparticle technique might eventually allow us to probe such changes, Yang says: “The novelty of the technology holds promise that it can open new ground.”

Flash floods devastated a southern Philippines region unaccustomed to serious storms, killing more than 500 people while they slept, rousting hundreds of others to their rooftops and turning two coastal cities into muddy, debris-filled waterways that were strewn Saturday with overturned vehicles and toppled trees.

Most of the victims were asleep Friday night when raging floodwaters cascaded from the mountains after 12 hours of rain from a late-season tropical storm in the southern Mindanao region. The region is unaccustomed to the typhoons that are common elsewhere in the nation of islands.

Ayi Hernandez, a former congressman, said he and his family were resting in their home in Cagayan de Oro late Friday when they heard a loud “swooshing sound” and water quickly rose ankle-deep inside. He decided to evacuate to a neighbor’s two-story house.

“It was a good thing, because in less than an hour the water rose to about 11 feet,” filling his home up to the ceiling, he said.

At least 521 were dead, based on a body count in funeral parlors, Philippine Red Cross Secretary General Gwen Pang told The Associated Press. She said that 239 died in Cagayan de Oro ? a city of more than 500,000 ? and 195 in nearby Iligan, with more than 300,000 residents. The rest died in several other southern and central provinces, she said.

Many of the bodies were unclaimed after nearly 24 hours, suggesting that entire families had died, Pang said.

In a text message to Reuters, Pang said the death toll was expected to rise.
“Our death toll was based on the actual number of bodies that were brought to funeral homes in the two cities that were the hardest hit by the typhoon,” Pang said.

Missing in the storm
The number of missing was unclear Saturday night. Before the latest Red Cross figures, military spokesman Lt. Col. Randolph Cabangbang said about 250 people were still unaccounted for in Iligan.

The swollen river sent floodwaters gushing through neighborhoods that do not usually experience flooding. A man floated in an inner tube in muddy water littered with plastic buckets, pieces of wood and other debris. Ten people in one home stood on a sloping roof, waiting for rescuers even as water still flooded the lower floors.

Television pictures showed bodies encased in mud, cars piled on top of each other and wrecked homes. Helicopters and boats searched the sea for survivors and victims.

“We ran for our lives when we heard a loud whistle blow and was followed by a big bang,” Michael Mabaylan, 38, a carpenter, told Reuters. He said his wife and five children were all safe.

Aid worker Crislyn Felisilda cited concern about children who had became separated from their families or lost their parents. “Many children are looking for their loved ones… (and children were) crying and staring into space.”

Rosal Agacac, a 40-year-old mother, was begging authorities to help find her two children after their shanty was swept to the sea. “Please President Noynoy, help me,” she cried, holding a candle at a spot where their house stood before the floods, referring to President Benigno Aquino.

Benito Ramos, chief of the government’s Civil Defense Office, attributed the high casualties in Mindanao “partly to the complacency of people because they are not in the usual path of storms” despite four days of warnings by officials that one was approaching.

Thousands of soldiers backed up by hundreds of local police, reservists, coast guard officers and civilian volunteers were mobilized for rescue efforts, but they were hampered by the flooded-out roads and lack of electricity.

Many roads were cut off and there was no electricity, hampering relief efforts.

The missing included prominent Filipino radio broadcaster Enie Alsonado, who was swept away while trying to save his neighbors, Iligan Mayor Lawrence Cruz said.

Rep. Rufus Rodriguez of Cagayan de Oro said that about 20,000 residents of the city had been affected and that evacuees were packed in temporary shelters.

‘Tragedy’
Authorities recovered bodies from the mud after the water subsided. Parts of concrete walls and roofs, toppled vehicles and other debris littered the streets.

Rescuers in boats rushed offshore to save people swept out to sea. In Misamis Oriental province, 60 people were plucked from the ocean off El Salvador city, about six miles (10 kilometers) northwest of Cagayan de Oro, said disaster official Teddy Sabuga-a.

About 120 more were rescued off Opol township, closer to the city, he added.

Cruz said the Philippine coast guard and other rescuers were scouring the waters off Iligan for survivors or bodies that may have been swept away to sea.

Tropical Storm Washi dumped on Mindanao more than a month of average rains in just 12 hours.

It quickly cut across the region overnight and headed for Palawan province southwest of Manila on Saturday night.

Forecaster Leny Ruiz said that the records show that storms that follow Washi’s track come only once in about 12 years.

Lucilo Bayron, vice mayor of Puerto Princesa in Palawan, said he already mobilized emergency crews but local officials have not ordered an evacuation yet because the weather was still fine.

U.S. Secretary of State Hillary Rodham Clinton said in a statement that the Obama administration offered “deepest condolences” for the devastation in the southern Philippines.

“The U.S. government stands ready to assist Philippine authorities as they respond to this tragedy,” the statement said. “Our thoughts and prayers are with all of those affected.”

Eco-friendly decorating is easier and cheaper to pull off than you might think. There are lots of little things you can do each day to create an eco-friendly interior space that is beautiful, affordable, and green.

Reusable Resources

When decorating on a budget, utilizing resources like eBay, Craigslist, thrift stores, and garage sales are a must. But it is also a very good eco-friendly decorating habit. Anytime you buy pre-owned or used items, you not only save money, but you save energy and waste by not producing something new. The next time you are ready to buy something new, stop and ask yourself if you could find something just as good or similar that is used. Remember that a can of spray paint can do wonders for just about anything.

Eco-Friendly Materials

If you?re in the market to buy something new, you should be aware of some great eco-friendly decorating materials that many products are made from. Organic cotton and Bamboo are easy to come by these days in most stores without a hefty price tag. Bamboo is one of the best materials because it grows with few chemicals and naturally regenerates. Bamboo floors, shades, baskets, sheets, and fabrics are items you can find everywhere. If you?re looking for a rug, try one made from natural materials like jute, wool, and sisal. Cork is also a great option for walls and floors. Items made from these natural materials have very comparable price tags to those made without them. Sure you can find lots of pricey ?green? decorating stores and items, but it is just as easy to find affordable options mixed in with the stuff you see every day. You just have to know what natural materials you?re looking for.

Eco-Friendly Lighting Fixtures

There are few simple eco-friendly decorating tips you can use to save energy every day and lower your monthly bills. First, switch out your regular light bulbs with soft white compact fluorescent light bulbs (CFL?s). You won?t have to replace your bulbs nearly as often and the energy savings add up big time. CFL?s have come a long way since they first came out. No longer do they cause a harsh, bluish tone. They have been replaced by much warmer tones with many styles to choose from as well. Shop for those that say ?soft? or ?warm? white to get the same glow as traditional bulbs. Yes, CFL?s are a little more expensive, but the savings in electricity will make up the difference in just a matter of months. Some energy companies will even give you a credit for each CFL bulb you use. Not bad! Second, if you?re in the market for a new appliance, look for those with an Energy Star Label. These appliances require about 10-50% less energy and water than regular alternatives. It won?t take long to see the savings add up in your wallet.

Eco-Friendly Shower Heads

A simple thing like replacing your shower head is a great eco-friendly decorating tip that can really add up in terms of water and money saved over time. Using a high efficiency 2.5 gallon per minute shower head will save about 30 percent fewer gallons of water every time you wash. There are also affordable models that will pause the flow of water when the temperature reaches a certain point. This translates into less hot water that you have to pay to heat up, not to mention the amount of water saved each year. A newer model like this might cost about 20-30 dollars more than a standard model, but over time the shower head will pay for itself. You can feel good knowing that you are saving a lot of water and money at the same time. Here is another quick tip to save even more water. Place a plastic bottle filled with water into your toilet tank. This will take up space and reduce the amount of water needed to fill up the tank between flushes.
